Roasted Poblano Corn Chowder

Ingredients:

  • 2 large poblano peppers

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 4 cups cauliflower florets

  • 2 cups chicken or vegetable broth

  • 1 cup unsweetened almond milk

  • 1 cup cooked corn kernels

  • Salt and pepper to taste

  • Fresh cilantro for garnish optional

  • Lime wedges for serving optional

Instructions:

Warm the oven up so it can broil


Put the poblano peppers on a baking sheet and broil them for 5 to 7 minutes, turning them over every so often, until all sides are charred and blistered


Take the peppers out of the oven and put them in a bowl


Put plastic wrap over it and let it sit for 10 minutes to steam


Take the peppers' skins off, take out the seeds and stems, and then cut them into small pieces


In a big pot, heat the olive oil over medium-low heat


Put in the minced garlic and diced onion


Saut for three to four minutes, until the onion is soft


It will take an extra 5 minutes of cooking after you add the cauliflower florets


Turn the heat down to low and add the almond milk and chicken or vegetable broth


Cook the corn kernels and add them to the pot along with chopped poblano peppers


For 15 to 20 minutes, or until the cauliflower is soft, let the soup simmer


Blend the soup until it's smooth with an immersion blender


Add pepper and salt to taste


If you want, you can serve it hot with fresh cilantro and lime wedges on top

Ingredients:

  • 1 whole rotisserie chicken

  • For Chicken Salad:

  • 1/2 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1/4 cup chopped celery

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh parsley

  • Salt and pepper to taste

  • For Chicken Tacos:

  • 8 small flour tortillas

  • 1 cup shredded lettuce

  • 1 cup diced tomatoes

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup chopped cilantro

  • 1 lime, cut into wedges

Instructions:

For Chicken Salad: Remove the skin from the rotisserie chicken and shred the meat into a bowl

Earl Grey French Toast

  • 2 large eggs

  • 1/2 cup of milk
